CHIANINA BOVINE RACE

Our animals live in perfect symbiosis with the surrounding nature, a strong point the company is proud of.

The Chianina is one of the most ancient bovine races and one of the most important in Italy. Its name derives from its area of origin, the Val di Chiana.
You can easily recognize the cow for its white-porcelain coat and its impressive size: it is the biggest bovine in the world. The bulls can reach 1.80 meters height. In our farm you can admire the superb white coats and the large size of this noble and well-known bovine race. The bull has the meat most nourishing, juicy and rich in protein.
Its cuts are peculiar for their lively red colour, fine-grained, solid, firm and smooth elastic texture with little fat infiltrations on the muscle mass.

Compared to the bull, the cow has a finer-grained meat with a less lively colour.
In adult cows that grew fat, the quality and nutritional characteristics are likely to the bulls'.
Usually, red meats just butchered have higher acid conditions and are very hard when cooked. That happens when they miss the frollatura process in which the meat is stored for 10 - 15 in the fridge. Tasty and meat sensory tenderness scores are significantly affected between the butchery and the cutting thanks to this natural process.
